Peppered Chicken and Asparagus

 Hooray for my first recipe post! I thought I would start out with something easy, which is why I picked this recipe. I used:
1 large chicken breast
a couple Tbs of olive oil
salt
pepper
garlic salt
15 asparagus stalks
You can easily adjust this recipe to feed any amount of people, just add more chicken and asparagus!
First, set the chicken out so it can begin to thaw. Then, wash the asparagus, and break it-if you bend it in half, it should break at its natural breaking point. 
Put the asparagus on a pan(I just used a baking sheet, but a baking dish would work as well) and drizzle olive oil over it. Make sure each piece is covered pretty well. 

 Then sprinkle with salt, pepper, and garlic salt over it until you feel satisfied, I did a pinch and a half of salt, 1 tsp of pepper, and 1/2 tsp of garlic salt. 

For the chicken: cover the entire chicken with olive oil, then coat both sides with salt, pepper, and garlic salt (I used 3/4 tsp salt, 1/2 tsp garlic salt, and 1 tsp of pepper).

I put my chicken and asparagus on the same pan, but they may not cook the same, depending on how frozen your chicken is. Cook the asparagus for 10-15 minutes, depending on how crispy you want it,(I like mine crispy) and the chicken for 20-25 minutes, again depending on how frozen it is. 
The asparagus should be soft, and the chicken no longer pink on the inside.

The Start of Something New

For a class, we are supposed to do a real world project that could help us in our desired field. I am pursuing a career in Communications with an emphasis in advertising or journalism, I haven’t quite decided yet. One aspect of this that I am interested in is blogging/writing as well as health and wellness. So, I have created a health and wellness blog. Here I will post new recipes I have tried out, exercises, wellness tips, and other related items. It was really hard to come up for a name for this blog. I Googled a list of clichĂ©s, and found “A few fries short of a happy meal.” I was looking for something food related, and so I asked my fiancĂ© what he thought of that. He gave the idea of calling it, “A few sizes short of a happy meal,” since that relates to food and health. I liked it so it stuck!
